Lucia’s Orange & Almond Cake
This is the recipe for the delicious cake our friend Lucia made for us to serve at our first summer workshop. Do try it and let us know what you think!
Ingredients
• 200g unsalted butter
• 280g caster sugar
• Zest of 3 oranges
• Zest of 1 lemon
• 140g ground almonds
• 140g almond flour
• 5 medium eggs
• 100g plain flour (sifted)
• A pinch of salt
Instructions
1. Preheat oven to 180°C. Line a 24cm springform tin with baking paper.
2. Make the batter:
– Beat butter, 280g sugar, and the zests in a mixer until soft.
– Add the ground almonds and the almond flour and mix gently.
– Add eggs one at a time while mixing.
– Add the rest of the almonds, flour, and salt. Mix until smooth.
3. Bake:
– Pour batter into the tin and smooth the top.
– Bake for 40 minutes. A skewer should come out a little moist.
4. Make the syrup:
– Mix 80g sugar and citrus juices (around 120ml total) in a pan.
– Bring to a boil, then remove from heat.
5. Add syrup:
– As soon as the cake comes out of the oven, brush it with the hot syrup to soak in.
– Let the cake cool completely in the tin.
6. Serve as-is with orange zest garnish.
Keeps well in an airtight tin for up to 3 days.
